Glass Explosion

I made a new discovery last night. Maybe you already know this, maybe not, but if I save one person from making the same mistake I'll have done my job well.

Don't use Pyrex when broiling.

I was making this fancy dinner (the lovely beef pinwheels you always see in the butcher case. I've always been tempted by them, but never done it before.) I had the rice ready, the green beans just barely steamed in a butter shallot sauce, and I had rocked those beef pinwheels under the broiler. They were lovely: a little char on the top, still nicely medium rare in the middle. I pull the Pyrex pan out of the oven, set it down on the burner and POP! Glass everywhere. All on the stove, in the oven, all on the floor. Luckily none of it got on me, because I could have been very badly burned.

Also luckily, the meat and cheese juices managed to hold the important bits of glass together so the pinwheels could be saved. I would have been very sad if we'd had to scrap the dinner. But they were yummy.

So, yeah: How to cook Beef Pinwheels

3" from the broiler, 6 minutes on a side. Just do it in a metal pan.
