Requests for Sour Cream Blueberry Pie accepted:
Nipper's Pie Crust
makes 2 deep dish crusts or one top and bottom
2 1/4 cup flour
1 tsp salt
2 tbsp sugar (optional)
1/2 cup butter
1/2 vegetable shortening
1/2 cup cold water
Note: There are two tricks to make the pie crust super flaky. First is to keep all ingredients as cold as possible. I put the water in the freezer before combining all other ingredients, I cut the butter and shortening into cubes and then allow them to sit in the fridge for a few minutes to firm up again before working with them. Secondly, take care not to work the dough too much. You only want it to come together, there should be very little kneading.
Combine flour, salt and sugar. Cut in butter and shortening until the dough resembles small pebbles with a little sand. Add the water slowly, gently forming the dough into a ball. Split in two equal balls and wrap in plastic wrap. Place in refrigerator overnight (or for at least one hour).
Sour Cream Blueberry Filling
1 deep-dish pie crust
2 pints fresh blueberries
1 cup sour cream
2 eggs
1 tbsp (ish) sugar
2 tbsp flour
pinch of salt
Pre-heat oven to 400 degrees. Roll out pie crust and place in pie pan. Form edges as you prefer, place in refrigerator to cool and reset.
Mix sour cream, eggs, sugar, flour, and salt until creamy. Wash blueberries and put in sour cream mixture. Stir to coat. Pour blueberry mixture into pie crust. Place in middle of center oven rack. Cook for 15 minutes. Reduce heat to 350 degrees and continue cooking for 30 minutes.
Cardamom Crumble
1/3 cup sugar
1/3 cup flour
1/3 butter
1 tbsp (heaping) cardamom
Mix together all ingredients. Remove pie from oven. Evenly coat top of pie with crumble. Turn pie 180 degrees (so the side of pie that faced the back now faces the front), place back in oven and cook for 15 more minutes. If crumble begins to burn, cover with aluminum foil. Remove pie from oven and cool at least 15 minutes before serving.
Pie will probably be puffed up when taken from the oven, but will flatten slightly as it cools. This is normal.
